What healthy (vegan) to work?

In June, 2 years pass since we don't eat meat and limit other animal products, including eggs, milk etc.
When I stopped eating meat, eggs, fish and drinking milk, there was a day when I began to wonder what I would take to work (I was still employed at that time). Now everything is simpler, because I can go to the kitchen and cook something at any time. There was no such possibility at work. So what to eat at work while on a vegan diet?
Salads are a good idea. It's very easy to make them by buying a ready-mixed salad mix and adding your favorite vegetables. My favorite salad is very simple. All you need is a large handful of rocket and beetroot cut into thin slices. I sprinkle with pumpkin seeds and pour olive oil. I sprinkle a little sea salt and pepper. This dish is delicious and filling for longer. And it's very simple.
Other versions of salads include mix of lettuce, canned corn, cherry tomatoes, you can add roasted sunflower seeds and fresh basil leaves. You can make the sauce from olive oil with a little lemon, salt and pepper and agave syrup.

Leftovers from yesterday

Our dinners for work sometimes ended up taking the dinner from the previous day. Remember that a glass container that does not soak in odors is the best. You can put spinach tart in it one day, and sliced fruit to chew on the other. Such a container also has another advantage - it can not be colored with food. The disadvantages are definitely heavier than a plastic container.
Returning, however, to the topic of leftover food - if you have the opportunity to reheat food brought at work, you can take everything. You will be limited only by your imagination.
A very good idea is sliced zucchini fried with mushrooms and sprinkled with fresh basil or yellow string beans and grated beets (of course, in a separate container).

Wrap with vegetables

Wraps are not only easy to prepare, but also very tasty and filling. My favorite wrap is one with hummus, iceberg lettuce, corn, peppers and oyster mushrooms. And for this homemade sunflower garlic sauce ... I'm already getting saliva when I think about it 😉
Another, equally tasty wrap can be with spinach stuffing or arugula and baked beetroot. You can literally put anything in wraps. I even know people who make sweet wraps with peanut butter, banana and cinnamon. I haven't tried myself yet, but why not!

A good idea for a nutritious dish at work is soup. I do not recommend buying ready-made soups, especially those in powder (although some companies offer really good ready-made soups, e.g. Marwitt). Soup with the addition of porridge or lentils can saturate for many hours.

Did you get hungry during the day?

Munch nuts or take to work chopped vegetables (e.g. zucchini, carrots, peppers, fresh cucumber) or fruits (strawberries, grapes, apple). You can take hummus with vegetables, which is easy to prepare and very filling.
Let me know what you usually take with you to work 🙂

Very interesting and inspirational post! Since I bought a lunch box in Ikea, I bring home lunch with me mainly salads or vegetables, sometimes "leftovers" from yesterday's supper in the form of couscous, cereal or rice - greetings 🙂
